Mexico's underwater cave system is the longest in the world. Dos Ojos is the right entry point for beginners: shallow, clear and extraordinary. I dive with certified cavern instructors.

Two days on Laguna Bacalar — the Lake of Seven Colors. Kayak from shore to shore, camp on a sandbar, swim in the stromatolites. No motorboats allowed where we go.

June to September only. The largest aggregation of whale sharks on the planet gathers in the waters north of Isla Mujeres. No cages, no barriers — you swim next to them. I handle the boat and the permits.

Chichén Itzá at dawn — before the crowd
The site opens at 8am. Most tour buses arrive at 10. I take you in at first light — you'll have the Temple of Kukulcán to yourself for an hour. Story-first approach: no 'look at this rock' narration.

Lucas de Gálvez market at 7am — the city's main market before tourists arrive. Cochinita pibil tacos, marquesitas, panuchos and the one lonchería Meridanos actually eat at. Three-hour walk, you eat the whole way.

Uxmal's sound-and-light show runs Thursday and Saturday nights. The Pyramid of the Magician lit up in the dark with projection mapping is something Chichén doesn't have. Combine with the ruins at sunset the same day.

Sian Ka'an biosphere — boat & mangrove
Sian Ka'an is a UNESCO biosphere reserve and the largest protected area in the Mexican Caribbean. Boat through the canals, spot manatees and crocodiles, swim in a turquoise lagoon with no access road. This is what Tulum used to be.

Palenque is in Chiapas, not Yucatán — and most people fly in and out without staying the night. The ruins at 6am in the fog, howler monkeys in the canopy and zero tourists, is worth the extra day. I handle everything.

Calakmul is the most important Maya city never discussed in tourism. It's deep in the jungle, accessed through a biosphere reserve — which means wildlife en route: jaguars have been spotted on the road. I know the park and the pyramid.
